Orange and soy glaze from Bon Appetit, January 2012
1/2 cup soy or tamari sauce
6 garlic cloves, minced
3 tsp cumin seeds
2 tsp crushed red pepper flakes
3 Tbsp. vegetable oil
6 scallions–white and light green parts finely chopped; dark green parts sliced for garnish
1 1/2 cups orange juice plus zest from 1 orange
3 Tbsp. honey
Zest from 1 lemon and 1 lime for garnish
Heat oil in a small saucepan over medium heat; add cumin seeds and red pepper flakes. Toast lightly until fragrant, about 30 seconds. Add garlic cloves and finely chopped scallions. Saute until just soft, about 2 minutes. Add soy sauce, orange juice and honey. Bring to a boil and cook until sauce is thick, about 12-15 minutes.
This sauce works for everything! We have used it on baby backs, chicken, salmon; even veggies.
We use the dark green parts of the scallions and the zest of lemon and lime as a garnish, but this is optional.
