Blueberry-Balsamic BBQ Sauce
Recipe by Robyn Webb, MS, LN; photograph by Kyle Dreier; food styling by Whitney Kemp
- Makes: 12 servings
- Serving Size: 2 Tbsp.
- Preparation Time: 5 minutes
- Cooking Time: 30 minutes
|2||cups||frozen, no-sugar-added blueberries|
|1/2||cup||lower-sodium, lower-sugar ketchup (such as Walden Farms)|
|1/4||cup||light-brown sugar or equivalent brown sugar substitute|
|2||tsp.||mild or hot chili powder|
|1/4||tsp.||freshly ground black pepper|
Combine all of the ingredients in a medium saucepan. Bring to boiling over medium-high heat. Lower the heat and simmer for 30 minutes, until thickened. Serve as is or, for a less-chunky consistency, add the sauce to a food processor or blender and blend until smooth. This sauce is delicious on grilled, baked, or broiled chicken, pork loin, salmon, and shrimp.
